Guacamole, the avocado sauce, as old as the Aztecs themselves, is one of the most famous Mexican dishes worldwide. Made from mashed-up avocadoes, onions, tomatoes, a squeeze of lemon juice, chilli peppers, and sometimes a clove or two of garlic. It is often eaten with tortilla chips or as a side dish.
What about enchiladas? Tostadas? Chilaquiles? Elotes?
